Computational Modelling of the Heat Transfer Characteristics during the Pulsed Vacuum Drying of Momordica Chanrantia

Abstract
This paper pertains to the computational modelling of the Pulsed Vacuum Drying (PVD) of Momordica Charantia slices. A transient thermal analysis was performed and influence of various system parameters on drying characteristics were studied. The influence of the system parameters such as time, pressure, pulsing ratio and temperature on the drying characteristics like the volume fraction of the liquid and evaporation rate were studied through the computational modelling.
